Why did I turn on the oven!

I just learned a very valuable lesson. If it is 34 degrees out, and your apartment has no air conditioning...do not turn on the oven or cook bacon. Unless you like melting to death!

Other than melting, I decided to try and cook something that was deeelicious, and it actually turned out! Here is what I did to make delicious twice baked cheesy, bacon, peppers, onion potatoes. (Ok, the name sucks I know)

First, I washed and scrubbed a few potatoes (Since there is only 2 of us, I used 4 potatoes so we could have leftovers!)
Then I placed them on tinfoil, stabbed the potato a few times and put just a pinch of salt and a DROP of oil in with the potato and wrapped it up. I then baked them @ 350 for just over an hour.

Once they were baked, I opened them up and sliced them in half, and tried to remove as much of the insides as I could, placing the skins on a baking sheet. With the innards of the potato I made mashed potatoes (added milk and butter accordingly) and put the mashed potatoes in the skins of the baked potatoes.

I then proceeded to (with the help of my husband) fry up some bacon, onions and yellow peppers. Once they were all cooked, I shoved the peppers and onions into the mashed potatoes and put a piece of bacon on top, then covered the top with cheese and baked for another 5-10 minutes.



If you are paying attention, you'll notice there should be one more half
but I threw it in with the mashed potato mix because I didn't
think there would be enough!!


They actually turned out super good, and were delicious with ranch dip! (but come to think of it...a lot of things are delicious with ranch dip!)
