S'more cupcakes!

Aright! Tried another Pinterest recipe! S'more cupcakes! They were pretty good...although this was one of the first times I have cooked in my new oven...so sadly 50% of them were SCORCHED!! I was so sad! 
These were actually super easy to make..I think I will try to make these again when I am used to my crazy oven. 

1  box Fudge Brownies (I didn't have brownie mix...so I used chocolate cake instead)
1/4 cup water
1/2 cup vegetable oil
3 eggs

20 graham crackers
1 stick unsalted butter, melted
1/2 cup sugar
1 bag unsweetened mini chocolate chips

Marshmallow
2 Hershey Bars (I didn't have hershey bars...so I used chocolate chips. But I think the hershey bars would have been way more delicious!) 


Preheat oven to 350 degrees F and place 24 cupcake liners in muffin tins. Prepare brownie mix according to package directions for "cake like" brownies (3 eggs instead of 2). Set aside batter.

Combine graham crackers and sugar in a food processor or blender and pulse until the crackers are crushed into small, even crumbs. Add melted butter and pulse again until mixture is crumbly but becomes firm when pressed.

Drop 1 Tablespoon of graham cracker 
mixture into the bottom of each muffin cup and use a small glass to press them down until evenly spread and firm. Sprinkle 1 teaspoon of chocolate chips on top of graham crust in each cupcake. Place cupcake pans in the oven for about 5 minutes to firm graham crusts and begin melting the chocolate.



Remove pans from oven and fill each muffin cup with brownie batter until 3/4 of the way full. Sprinkle each cupcake with another teaspoon of chocolate chips and a Tablespoon of graham mixture. Place tins in the oven and bake for approximately 20 minutes, or until a toothpick inserted into the center cupcake comes out clean.

Place 1/2 a full sized marshmallow on top of each cupcake. 



Turn oven to broil setting and place muffin tins, one at a time, under broiler . Watch the tops puff up and brown. This may only take a few seconds! Careful not to burn them! Shift tin as needed to make sure the marshmallow browns evenly. Repeat with the second tin. If desired, once cupcakes are completely cooled, top each with a piece of Hershey's chocolate.
The graham cracker bottoms on most of mine burnt...my dang oven destroys everything on the bottom rack! I guess this was a lesson!!








Yummy! But very messy!! Also...I wish I had let mine brown up a bit more! I was super paranoid I was going to set off the smoke detector! (PS...it works if your oven is on BAKE not BROIL, just not as well.)

Oh hey...We moved!

This is my "We are so cramped in this tiny apartment, lets get out" face. 
If you have been following my blog, you'll know that when we came to medicine hat to find an apartment, we only had one day to accomplish this. All that we were concerned about how close it was to the College and how cheap it was. (At the time I did not know how long it would be until I was working.) The apartment we were living in was alright, it was little and cheap...all we needed. The problem with the place, was that since it was only a one-bedroom apartment, if Travis needed to study I either confined myself to the bedroom or bathroom so I wouldn't distract him. Plus I have pretty much been working more than the full timers at work, so that has been great! Cannot complain about the money! I also just got hired on as a casual worker in the OR...I'm pretty excited because I worked in the OR in Lethbridge and was really sad to leave!! Hopefully I continue to work lots so I can continue to put my man through school!
Anyways...since we live in the ghetto (not really) half of our building is empty! (Probably because there are no kids allowed...) So we checked out a few places and chose a 2 bedroom place down the hall! Its only $100 more a month and literally twice the size. I have no idea how we lived in that cramped space before!! Here are some pictures!

Sooo our apartment isn't the fanciest...but it is still cheap and close to the College! We are so very happy with all this extra space!!

Cruise & Cali!

This one time we were SO lucky and able to join my family on a trip to San Diego for a wedding and then a cruise down to Cabo! We had SUCH a fun time and I was very sad to come home! Here are some fun pictures&stories from the trip!

The Texas rental car? In California? At least it didn't smell like bublegum, like  a rental van we had in Vegas one time!


The San Diego Temple! 

Look at how perfect this temple is!  It was even more beautiful inside! There was this incredible garden on the top floor that was enclosed in glass, but it was open to the sky...so if it rained outside, it would rain into that garden! It was SO cool! You could also look straight up and see the golden Angel Moroni...way cool!

Here comes the new Mr. & Mrs. Binning!

They had a big wedding party!

This is Kassy's little brother, Sam. At the family dinner the previous night, everyone had to stand up and introduce themselves. If any of you know my grandpa Bill, he simply stood up and said "I'm Santa Clause" and sat down. Well Sam, (being only 5 or 6) was so amazed that Santa was there! He ran right up to him and gave him a hug! Then my grandpa gave him a toonie or a loonie..not sure, and told him it was north pole money. I am pretty sure that was the cutest thing I have ever seen. This little boy legitimately believed Santa was at the wedding and kept saying "hi santa". SO cute! 

Between the Ceremony and the reception, we went to In-N-Out! Yumm!

So pretty and delicious! 

So I guess we weren't allowed to be married at the wedding!

Did I mention as we were pulling into port we saw TONS of whales and dolphins swimming and jumping around in the ocean!? It was so magical!!

Fairmont with the Johnsons!

The week before Christmas, we were fortunate enough to go spend time up in Fairmont with the Johnson clan! We had such a blast with everyone! It was extra special because we were able to drive to Calgary on of the days to pick up Jesse from his mission! I had never met Jesse (as he was in Australia for the past 2 years) and I have never picked up a missionary at the airport! Such a cool time! We are so lucky to have 2 adorable nieces and 2 adorable nephews! Since there was not really tons of snow...some of the boys only went snowboarding one of the days, but fortunatly there was a sweet recreation center where we could swim, hot tub, play racquetball and do tons of other things at! Once Jesse was released, we forced him to watch some of our favorite movies he had missed while being a missionary. So basically we had a whole week to relax with family, eat good food and play lots of games! I am so lucky I married into such a fun family!!
